Marbled Chocolate & Orange Tavoletta

raw food recipe chocolate tavoletta

 

For the crust

3/4 cup carob powder
1 cup almonds
1/2 cup dates
4 tbsp coconut oil
2 tsp vanilla extract
2 tsp cinnamon
1/4 tsp salt

1. First process nuts, cinnamon, salt and carob powder into small crumbs.

2. Add dates, coco oil and vanilla extract and process again.

3. Press into the bottom of 9″ square pan and place in fridge whilst working on filling.


Note: Before making this chocolate you should place the grated cacao butter in the dehydrator to melt. Alternatively you can melt it in a bowl over another bowl of hot water
.

For the marbling

1 cup cashews
1 tbsp coconut nectar or honey
1/4 cup coconut oil
1/2 cup water
5 tbsp melted cacao butter

1. Mix all ingredients in a high power blender until completely smooth.

For the filling

2 cups cashews
1 cups orange juice
1 tbsp orange zest
2 cups cacao powder
1 & 1/2 cups grated cacao butter
2 tbsp vanilla
1 cup coconut nectar or 1/2 cup maple syrup and 1/4 cup xylitol

1. Mix the cashews, orange juice, orange zest, vanilla, and agave nectar in a vita-mix until smooth.

3. Add cacao butter and cacao powder, and blend again.

4. Pour chocolate mixture onto base and use a spatula to achieve a level surface.

5. Drizzle the marbling mixture over the top in lines using a plastic bottle or a spoon. Drag a toothpick across the top to create the marble effect.

    Depend where you are in the world. A Google search for cacao butter will give you plenty of options.

    this picture looks awesome, I will definitely try it. I just don't understand how to do marbling, could you please explain in more detail, maybe a picture or a video if you don't mind.

    Thanks! Looks Great! Why carob for the crust? May I use cacao or would it be overpowering? And will you make the other 5 of the first 6 installments available? The link doesn't work. I have been ogling the other 20 recipes like a 15 year old boy with a peephole into the girls locker room :)…fasting….almost through. Thanks again!

    Hi Russell, I am new to raw food lifestyle and trying out some of your recipes. They look really good. I am having my family over and want to impress them with this dessert, however not reading the recipe ingredient properly I bought coconut butter instead of cacao butter can I substitute the cacao butter with coconut or will it alter the change? Thanks

    Cacao butter is very different to coconut butter, if you sub the 2 cups of cacao butter with it you'll end up with very coconut tasting chocolate and it won't set as hard.

    this looks terrific, however last time i tried to make a base consisting of nuts and dates my blender couldnt handle the dates – is there any way around this?

    A base like this should be done in a food processor and not a blender.
