Raw Food Recipe: Serving Raw Cashew Cheese

It’s now easier than ever to make your own non-dairy raw nut cheese to satisfy that cheese craving. Whenever I make one of these cheeses it’s usually gone within hours.

But rather than just eat it all on its own there’s some really nice additions to the cheese that can be served with it that make the most of the flavour and texture.

Some of these additions bring sweetness to the acidity of the cheese – a perfect balance. Others are there for texture.

In this video I’ll show you what to plate with the cheese and, of course, hwo to make it look great, should you want to serve to friends and family.

    Nice one Russell. Very timely indeed. I have been trying to make the nut cheese as yummy as I did at 105degrees but still am yet to perfect it. I am suspecting it is because of the probiotics I have. Hmmm back to the kitchen for me :)

    The Home Study course is just brilliant. I am in Sydney Aus, Someone is asking how to buy without too much postage. I paid end of last year. My questiont is how do you grow your wheat grass that I can see in the DVDs.? I heard Viktoras Kulvinskas say he grows

    Hello James, The date paste is a nice idea as another sweetener,thanks.Plating the cheese too looks pretty with the pesto and everything. But I like the great cheese recepe to make it myself with the crust .Where is the recepe please??

    Hi, I just purchased Russell's Cheese E-book. Does anyone have any suggestions on what “probiotics” to use? Are they all the same? I have some GI-ProStart for making yogurt.

    New Chapter do a good probiotic. If you can only get the ones in capsules you can simply pull them apart to the amount you need.

    I've just looked at yoghurt starter online and it looks like it would work as it's just a selection of probiotics.

    If it's important to you that it's not dairy-based be sure to check that. Some probiotics are.

    I did the caraway, fennel cheese. The taste seems good. I put it in the fridge and try to stay away from it but in your video “serving raw cashew cheese” the cheese seems to have a kind of crust. Mine looks like Boursin. Do I need to put it in the dehydrator for a while? Thanks. Francoise

    I followed the recipe Caraway, fennel….and the recipe said 2 cups of macadamias.
    Is it better to do it with cashew ? Why do you choose to do this one with macadamia? I am a pain in the neck but I try to understand the nuances !

    :)

    The macadamia will be firmer sooner but will only get to a certain point of firmness due to the macadamia's fluffiness.

    The cashew versions will take longer to firm up in the fridge but will keep getting firm over the course of the days and weeks, ending up with a more sliceable cheese.

    The longest I've left the cashew cheese in the fridge is 6 weeks and it was good.

    Thanks so much for your generosity and divine talent in the kitchen! I have your beautiful Raw Chef/ Have time to Eat binder and it is soo much fun and delicious. I agree with a previous writer, that you are the Premier Raw Chef along with Chad Sarno! Your recipes taste fantastic and are so easy to follow. I can finally make a professional looking crust and serve “Quiche” to my non raw guests with out a blink to their eye!! Only oooh's and ahhhh's come from them!!!! Yeah us that we have you in our midst!!
