Pint Nut Parmesan

The biggest challenge with this recipe is not eating it all before it comes out of the dehydrator!

This is a bit of a raw food classic dish, but just like any classic, everyone’s got their own take on it.

I just love the way this comes out of the dehydrator flaky and crumbly after 24 hours.  It’ll turn a regular salad into something really special and it’s pretty easy to make.

If you’re looking for some Netflix watching snacks, you can do a lot worse than a bowl of this and some cherry tomatoes.  Yeah, things get pretty posh in my house when it’s time to dig in to a box set 🙂

I know pine nuts are pretty expensive right now, so you can totally halve this recipe too.

So I’m giving you this weekly recipe now, as I plan to feature in at least the next 2 week’s worth of recipes.  Look out for those, they’re going to be a treat.

Recipe

Pint Nut Parmesan
  • 2 cup pine nuts
  • 1 cup water
  • 3 tablespoons lemon juice
  • 1/3 cup nutritional yeast
  • 1 teaspoon salt
  1. Blend all ingredients in a high speed blender
  2. Spread on a dehydrator sheet and dehydrate for 24 hours at 115 degrees F

    I made this yesterday, the flavor is really good, but it didn’t come up right, I still have it in my deshidrator. Some parts are still soft and oily after almost 24 hours. I only made half of the recipe. I live in warm Miami, FL, so maybe the humidity and heat play a big factor. Of course I will keep trying, I think this is the best substitution of real cheese I found so far. Thank you.

      Hey Gracie, yes the humidity could have something to do with it. Just leave it in there until it’s completely dry 🙂

    Haha russell how would you store for weeks?? I eat them so fast. I moved so trying to build up my raw pantry again.

    Deliiiiiicious!! hahah the trick is to make double the amount, so even if half gets picked at straight from the dehydrator you still have some leftover!!

    Hi Russell… I only had one cup of Pine nuts left in my pantry, therefore as per your suggestion I cut the ratios in half. However, the mixture seemed very thin and runny and since this is my first attempt at making this “cheese” I am curious, what should the consistency be– Please advise. I poured the batch onto the non-stick sheet and was afraid that the mixture would just run off the tray. So far it hasn’t, therefore I presume after a certain amount of time I am to flip it over so that it can finish off dehydrating on the mesh screen?

      It sounds like it could have been a bit thicker, but it’s OK since you’ll be dehydrating it anyway. Yes, just wait for it to get dry enough and then flip it over 🙂

    Hi Russell…. Pine nuts are expensive, you are right 🙂 I have been looking on Amazon. com for a good brand and price.

        Thanks Russell for the link– unfortunately I left my home country the UK approximately 35 years ago and now live in the USA . I do most of my shopping with Amazon being a “prime” customer deliveries arrived within two days. I was hoping you would know of a good brand of pine nuts selling on Amazon. Tree Harvest located in Devon is not doable for me.

          Hey Kasi, I don’t know of a good brand in the US on Amazon, but I think as long as you can find organic pine nuts, you’ll be fine 🙂

          Believe it or not, Costco currently carries organic pine nuts here in the US! They have at the store near me (in Temecula, CA, but also had them online at Costco.com if you do not live near one.

    You say “comes out of the dehydrator flaky and crumbly after 24 hours” but the recipes says to dehydrate for just 12 hours. I am wondering if I missed anything. 🙂

    Have you ever found a nutritional yeast that is organic? I have never found one.
    And since nutritional yeast is grown on top of sugar cane and sugar cane is one of the most heavily sprayed crops.

      I’ve not tried it, but pine nuts have a very specific quality to them that makes them good for this, so I’m not sure it would translate.

      There isn’t a direct substitute, but I would add a little garlic powder, onion powder and maybe a touch extra salt.

    DIVINE?…… And wondering about an alternative to nutritional yeast as some folks dealing with yeast sensitivity also like to avoid nutritional as well…… Thanks so much for recipe. Love the crunch!!

      I made this finally 7/17/16 while two people looked on. It was the proper thickness but it’s taking more than 24 hours to dry, as you all know. I made the mistake of trying to flip it over and it fell apart. Be careful at that stage because it no longer looks as beautiful as it once did. I would do as another person mentioned, make a double recipe. And you can get organic but raw? pasteurized? Pine nuts at Costco for a cheaper price. I forget how much tho. You still have to fork over a lot.

      Yes, I think cashew would work, as organic pinenuts are sooo expensive in Canada now. However, I’ve successfully tried this out with brazil nuts in the past. Divine! Either in the dehydrator or if you don’t have time, you can make it instantly. Not sure if it’s your recipe Russell, but i found it about 7 years ago somewhere: in a nutshell: some brazil nuts, with or without nutritional yeast (depends if you have it and of course it adds a flavour), himalayan salt, some fresh garlic and some ginger. I mixed it all up in my Vitamix and threw it on salads or cauliflower massaged with hemp seed oil. my 4 kids love it! Thank you Russell for sharing your recipes with us so generously.
