I achieve my goals of eating at least 2 pieces of fruit and 5 serves of vegetables a day, plus grains, seeds and nuts.
It starts with my breakfast - a weird looking thing, but delicious and doesn't get me hungry again for hours - so therefore, no snacks!
- Cucumber
- Kale
- Cabbage
- Lettuce
- Roquette
- Mint
- Apple
- Cherry-plums
- Raspberry
- Honeydew melon
Then topped with a home dry-roasted bunch of seeds, nuts and grains
- Almonds
- Hazelnuts
- Cashews
- Walnuts
- Brazil nuts
- Pecans
- Pepitas
- Sunflower Seeds
- Hemp Seeds
- Flaxseeds
- Oats
Put all of these seeds, nuts and grains in a food processor or Thermomix and mill for a 1-3 seconds, then put on an oven tray and roast for 30 mins, stirring around every 10 minutes.
Store in a sealed jar in your pantry and add them to various meals you make, including the morning salad.
