Cranberry & Apple Kale Salad
This kale, apple and cranberry salad is so simple and so tasty, it really has to be tried to be believed.
Kale Salad Recipe
We have several kale salad recipes on this site (here and here). If you’ve ever seen or tired them, you’ll know that there’s two way to go about preparing the kale. One is just to massage it with salt to wilt it down, so it has that steamed texture.
The other way is to quickly steam it for 2 minutes, as you’ll see in the video below. Many people find they can digest kale easier after a slight steaming, but if you like it raw and salted to wilt, then you also have that option with any of the kale salad recipes on this site.
As for this particular one, if you wanted to try something a little different, you could swap out the tahini for your favourite nut butter. Peanut butter would be pretty incredible, especially with the apple, cranberry and maple in there. If it’s sweet enough for you without the maple, you could just also leave that out.
Cranberry & Apple kale Salad
Nutrition (For one serving)
Ingredients
- 11 oz kale
- ½ teaspoon salt
- ½ cup cranberries dried
- 1 apple finely diced
- 1/4 red onion diced small
Dressing
- ¼ cup tahini
- 2 tbsp lemon juice
- 1 tsp maple syrup
- 2 tsp tamari
- 1 tbsp olive oil
- 2 tbsp water
Instructions
- Optionally steam the kale for 2 minutes. Remove the excess water with a kitchen towel. Roughly chop, mix with the salt and set aside.
- If not steaming, roughly chop the kale and massage with the salt until it wilts like it has been steamed.
- Mix all of the dressing ingredients in a bowl. Add the chopped kale, roughly chopped dried cranberries and diced apple. Mix well by hand and serve immediately.
