Date paste is a great whole food option for sweetening raw desserts if you’d prefer not to use liquid sweeteners.
It’s also great for replacing granulated sugar in desserts, but you have to take into account that you’re using a wet sweetener, rather than a dry one.
How to Make Date Paste Sweetener
- 1 1/2 cup water
- 1 cup soft dates stones removed
- 2 tsp lemon juice
- Blend all the ingredients in a highspeed blender or a food processor.
- Keep in a sealed container in the fridge for up to 2 weeks. If you want a thicker paste (if the recipe specifically calls for it) then use 1 cup water to 1 cup dates.
