I’ve haven’t made the spice in this recipe too intense, but if you’re like me and want to increase the chili powder or add some cayenne powder, go ahead and do so!
Of course the chipotle chili will not only add to the heat, but will give you a beautiful smokiness to the dish.
The recipe includes a topping of sprinkled hemp seeds. But in the images we’ve topped these with a little pico de gallo and avocado.
The sauce you see is a variant of cashew sour cream with added chipotle powder and red bell pepper.
Serve these as little ‘boats’ or tear up some salad leaves, dress with a little olive oil and lime jiice. Then top those with with seed mixture, pico and hemp seed.
Smoky Maple Sunflower Seeds
Nutrition (For one serving)
Ingredients
- 2 gem lettuce (or similar leaves)
- 1 tbsp hemp seed
- 1 cup sunflower seeds soaked 4 to 8 hours
- 3/4 cup sun-dried tomatoes (soaked for 1 hour to soften)
- 1/2 cup baby tomatoes (halved)
- 1 chipotle chili (soaked for 2 hours until soft)
- 1 tbsp dark miso
- 2 tsp cumin
- 1 tsp chili powder
- 2 tsp ground coriander
- 1 tbsp olive oil
- 2 soft dates (chopped small)
- 1/4 cup water
- 2 tsp garlic powder
- 1 chili (seeds removed and then finely diced)
- 3 spring onions (green onions) (diced)
- 1/4 cup cilantro (coriander) (roughly chopped)
- 1 tsp maple syrup
Instructions
- In a food processor, grind all the ingredients together (except lettuce and hemp seed) so they are broken down but still a little chunky.
- Separate out the gem lettuce into individual leaves. Fill each one with some of the seed mixture and sprinkle with hemp seed.
- You could also make a little pico de gallo to add to this dish, as we've done in the photos. Even just a few tomatoes finely chopped would be a great addition if you're not into making the full pico.
