Cranberry & Apple kale Salad

A lovely, simple kale salad recipe with a twist.  Those sweet flavour bursts from the apple and cranberries, along with the creamy dressing is a delight

  • 11 oz kale
  • ½ teaspoon salt
  • ½ cup cranberries dried
  • 1 apple finely diced
  • 1/4 red onion diced small


  • ¼ cup tahini
  • 2 tbsp lemon juice
  • 1 tsp maple syrup
  • 2 tsp tamari
  • 1 tbsp olive oil
  • 2 tbsp water


  • Optionally steam the kale for 2 minutes.  Remove the excess water with a kitchen towel.  Roughly chop, mix with the salt and set aside.
  •  If not steaming, roughly chop the kale and massage with the salt until it wilts like it has been steamed.
  • Mix all of the dressing ingredients in a bowl.  Add the chopped kale, roughly chopped dried cranberries and diced apple.  Mix well by hand and serve immediately.
